Snickerdoodle cheesecake bars

Y'all, this dessert. I just can't even. I am not a HUGE cheesecake fan but there is so much going on here, you don't even really notice it.

A few weeks ago for Sunday dinner, I let Callie choose a dessert and this is what she chose. I didn't really look closely at what it was or how to put it together, all I did was buy ingredients.

On Sunday I started making it and realized it was a going to be a bit of work!
There are 4 layers: Crust, cheesecake, cookie and topping

For the crust you need: 1 and 1/2 cup of crushed graham crackers
1/2 cup of choppped pecans
1/4 cup of sugar
1/2 cup of melted butter

Mix up all this deliciousness and press into the bottom of a greased 9x13 pan

For the cheesecake layer you need: 2 packages 8 oz of cream cheese (I used 1/3 fat), softened
3/4 cup of sugar
2 eggs
1 tsp of vanilla
1/2 tsp of cinnamon

Beat all of this up in your kitchen aid or with a hand mixer until it nice and fluffy and pour over the crust layer. Then throw it in the fridge while you mix up the next layer.

For the snickerdoodles you need: 3/4 cup of butter softened, not melted
1 and 1/2 cup of sugar
1 egg
3/4 tsp of vanilla
1 and 1/2 tsp baking powder
1/4 tsp salt
2 cups of flour
1/2 tsp cinnamon
1/4 cup of chopped pecans

Mix up all of the ingredient minus the flour and pecans. Then slowly add them in after everything is blended.
Then it gets a little tricky! I took handfuls of cookie dough and rolled them into a ball and smashed them flat and placed them on top of the cheesecake layer... Like so...
Last for the "topping" layer you need: 1/2 cup of sugar and 1 tsp of cinnamon.
Sprinkle this over the cookie layer and voila!
Bake on 350 for about 40 minutes. It's okay if it's a little jiggly, as long as the cookies are looking golden it should be a go!

Now throw these back in the fridge to set up for 4 hours. I was short on time because the reading teacher didn't read the whole recipe before starting, so the freezer it was for about an hour and everything came out super tasty! This was quite the rich and delicious dessert!!
