broccoli cheese soup

I love soup, soupy, soupy, soup. Down, down it goes, down into my tummy. I don't know what it is about soup that is so filling and great on a cold day, but this is one of our favorite!  This recipe is so crazy easy to whip together I don't even have to look at the cook book any more! It is cheesy and full of veggies (so that makes it healthy, right?)

You need:
1 medium white or yellow onion, finely chopped
1 stick of buttah
1/3 cup of flour
1 bag of steamable broccoli florets
4 cups of milk (we used 2 %)
1 cup of half and half
1 cup chicken broth
2 and 1/2 cups of shredded, we used colby jack and sharp cheddar
4-8 oz of velveeta , optional (if ya want it, we do like plastic cheese as you know)
salt and pepper to taste

First, chop the onion finely and combine with the stick of butter in a stock pot on medium heat
Like so.... Let it cook for until the butter is melted and the onions are tender, about 2-3 minutes. While that is cooking steam your bag of broccoli in the microwave.
 Next add in the flour and let that brown a little, another 1-2 minutes.
It looks a hot mess, but wait...
Add in all of the liquid ingredients and whisk it together until there are no clumps of flour.
Pretty smooth. Let that come to a boil and then reduce to a simmer. While all the liquids are warming up, chop up the broccoli in a food processor or blender until the texture is to your liking. We like ours a little chunky.
(So I forgot to take a pretty picture in a bowl, this will have to do, trust me it's yummy!)
After the soup is good and hot mix in the salt and pepper and all the cheeses. When all the cheese is melty and the soup is good and thick, serve up a big bowl with a crusty piece of bread. It is delish and a great way to warm up after a long cold day!
